  • 1/2 cup whole milk (warmed)
  • 1/4 cup heavy cream (optional, for extra creaminess)
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper (freshly cracked)
  • 2 large yellow onions (thinly sliced)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth (or chicken broth)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish, optional)

Instructions

  1. Peel and chop potatoes into even chunks. Place in a medium saucepan, cover with cold water, and add 1 teaspoon salt. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes, until fork-tender.
  2. While potatoes cook, heat 1 tablespoon olive oil in a large skillet over medium-high. Add sausages and brown on all sides, turning occasionally, about 8-10 minutes. Remove sausages and set aside, keeping them warm.
  3. In the same skillet, add 2 tablespoons butter and 1 tablespoon olive oil. Add sliced onions and cook over medium-low heat, stirring often, until soft and golden, about 12 minutes.
  4. Sprinkle flour over the onions; stir and cook for 1 minute. Gradually whisk in beef broth, then add Worcestershire sauce and thyme. Simmer, stirring, until thickened, about 5-7 minutes. Season with salt and pepper.
  5. Drain cooked potatoes in a colander. Return to saucepan and mash with 4 tablespoons butter, 1/2 cup warm milk, and 1/4 cup cream (if using). Season with salt and pepper. Mash until smooth and fluffy.
  6. Divide mashed potatoes among plates. Top with sausages, then ladle onion gravy generously over everything. Sprinkle with chopped parsley and serve immediately.

Notes

For gluten-free, swap all-purpose flour for a gluten-free blend or cornstarch. For dairy-free, use vegan butter and oat milk in the mash. You can use chicken, turkey, or plant-based sausages for dietary preferences. Mix russet and Yukon Gold potatoes for extra flavor. Gravy and mash can be made ahead and reheated gently.
