Ingredients

Scale
  • 2 medium-sized apples, peeled and diced (Granny Smith or Honeycrisp)
  • 2 cups all-purpose flour, plus extra for dusting
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup milk (whole or 2%)
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • Pinch of ground cinnamon (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Peel and dice the apples into small chunks. Toss them with 1 teaspoon of ground cinnamon and set aside.
  3. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt.
  4. In another bowl, whisk the milk, melted butter, egg, and vanilla extract until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  6. Gently fold the diced apples into the dough using a spatula.
  7. Scoop about 1/4 cup of dough for each fritter and place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted in the center comes out clean.
  9. While the fritters are baking, whisk together the powdered sugar, milk, and cinnamon in a small bowl until smooth.
  10. Once the fritters are slightly cooled, drizzle or brush the glaze over them. Let the glaze set for a few minutes before serving.

Notes

[‘Use firm apples like Granny Smith or Honeycrisp for the best texture.’, ‘Avoid overmixing the dough to keep the fritters soft and fluffy.’, ‘If the glaze is too thick, add a splash of milk. If too thin, whisk in more powdered sugar.’]
