  • 34 medium apples (Granny Smith or Honeycrisp)
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • 1/2 cup heavy cream (for caramel sauce)
  • 1 teaspoon vanilla extract
  • Vegetable oil (for frying)

Instructions

  1. Peel and dice 3-4 medium apples into small cubes (about ½ inch). Place them in a medium bowl and toss with 2 tablespoons of lemon juice to prevent browning.
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add the diced apples, ¼ cup granulated sugar, ¼ cup brown sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon ground nutmeg. Stir to combine and cook for 8-10 minutes, until the apples are tender and the mixture is thickened. Remove from heat and let cool for 10 minutes.
  3. Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of the apple filling onto the center of the wrapper. Fold the bottom corner up over the filling, then fold in the side corners tightly. Roll up the wrapper securely, and seal the edge with a bit of water using a pastry brush. Repeat until all wrappers are filled.
  4. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Fry the egg rolls in batches for 2-3 minutes on each side until golden brown and crispy. Remove with tongs and place on a plate lined with paper towels to drain excess oil.
  5. In a small saucepan, melt ½ cup butter over medium heat. Add 1 cup brown sugar and stir until dissolved. Slowly whisk in ½ cup heavy cream and stir continuously until the mixture thickens, about 5 minutes. Remove from heat and stir in 1 teaspoon vanilla extract.
  6. Arrange the egg rolls on a plate and drizzle generously with the warm caramel sauce. Serve immediately for the best flavor and texture.
