Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup (120ml) whole milk
  • 2 medium apples, peeled, cored, and chopped into small chunks
  • ¾ cup (95g) all-purpose flour (for crumb topping)
  • ½ cup (100g) brown sugar, packed (for crumb topping)
  • ½ tsp ground cinnamon (for crumb topping)
  • ¼ cup (60g) unsalted butter, melted (for crumb topping)
  • ¾ cup (90g) powdered sugar (for cinnamon drizzle)
  • 1 tsp ground cinnamon (for cinnamon drizzle)
  • 23 tbsp (30-45ml) milk (for cinnamon drizzle)
  • ½ tsp vanilla extract (for cinnamon drizzle)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch cake pan with butter or non-stick spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients. Mix just until combined.
  6. Gently fold the chopped apple pieces into the batter using a spatula.
  7. In a small bowl, mix the flour, brown sugar, and cinnamon for the crumb topping. Stir in the melted butter until the mixture becomes crumbly.
  8. Pour the batter into the prepared pan and spread it evenly. Sprinkle the crumb topping generously over the batter.
  9. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  10. While the cake cools, whisk together the powdered sugar, cinnamon, milk, and vanilla for the cinnamon drizzle until smooth. Add more milk if needed for a drizzling consistency.
  11. Once the cake is cool, drizzle the cinnamon glaze over the top. Slice and enjoy!

Notes

Ensure butter and eggs are at room temperature for a smoother batter. Don’t overmix the batter to avoid a dense cake. Use firm, tart apples like Granny Smith or Honeycrisp for the best texture and flavor.
