  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar (light or dark)
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup apple, peeled and diced (Granny Smith or Honeycrisp)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it well.
  2. Peel and dice the apple into small chunks. Set aside.
  3. In a large bowl, whisk together the softened butter, brown sugar, and granulated sugar until smooth and creamy. Add the eggs and vanilla extract, whisking until fully combined.
  4. In another bowl, stir together the flour, cinnamon, salt, and baking powder. Slowly add the dry mixture to the wet mixture, folding gently with a spatula until just combined.
  5. Fold the diced apples into the batter, ensuring they’re evenly distributed.
  6. Pour the batter into the prepared baking pan, spreading it out evenly with the spatula.
  7. Bake for 30–35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the blondies cool in the pan for at least 10 minutes before removing and cutting into squares.

Notes

For extra flavor, add a drizzle of caramel sauce or a scoop of vanilla ice cream when serving. Avoid overmixing the batter to keep the blondies chewy.
