  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 large apples, peeled and diced
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Peel and dice the apples into small cubes. Toss them with the brown sugar and cinnamon in a bowl, and set aside.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the milk and vanilla extract until fully combined.
  4. Gradually mix the dry ingredients into the wet batter, folding gently with a spatula to avoid overmixing.
  5. Pour half the batter into the loaf pan. Spread half of the apple mixture on top. Add the remaining batter, then layer the rest of the apples on top.
  6. Preheat your oven to 350°F (175°C) and bake the bread for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Mix the powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled bread and let it set before slicing.

Notes

Use firm apples like Granny Smith or Honeycrisp for the best texture. Allow the bread to cool completely before adding the glaze to prevent it from melting.
