  • 2 lbs sirloin, ribeye, or strip steak, cut into 1-inch pieces
  • 1.5 lbs baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 3 tbsp honey
  • 5 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1/2 cup beef broth
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 2 tbsp chopped fresh parsley, for garnish (optional)

Instructions

  1. Slice the steak into 1-inch cubes, trimming excess fat if desired.
  2. Halve the baby potatoes, leaving skins on.
  3. Mince garlic, chop parsley, and measure out all other ingredients.
  4. In a mixing bowl, whisk together melted butter, honey, minced garlic, soy sauce, beef broth, Italian seasoning, salt, and pepper until well combined.
  5. Add steak cubes and halved baby potatoes to the slow cooker.
  6. Pour the honey garlic butter sauce evenly over the steak and potatoes.
  7. Gently toss with a wooden spoon to coat everything.
  8. Cover and cook on LOW for 5-6 hours or on HIGH for 2.5-3 hours, until steak is fork-tender and potatoes are soft but not falling apart.
  9. Once cooked, gently stir to coat everything with the sauce. Taste and adjust salt and pepper if needed.
  10. Sprinkle chopped parsley over the top for garnish.
  11. Serve hot, spooning extra sauce over steak bites and potatoes. Garnish with extra parsley if desired.

Notes

For gluten-free, use tamari or coconut aminos instead of soy sauce. For dairy-free, substitute olive oil for butter. Keep steak cubes at 1 inch for best texture. Sear steak bites before slow cooking for extra flavor, if desired. If sauce is thin, uncover for last 30 minutes or mash a few potatoes to thicken. Leftovers taste even better the next day and can be frozen for up to 2 months.
