Tender beef bites and creamy potatoes are slow-cooked in a rich garlic butter sauce for a comforting, fuss-free family dinner. This easy recipe is packed with flavor, requires minimal prep, and is perfect for busy weeknights or meal prep.

  • 2 pounds beef chuck roast or stew meat, cut into 1-inch pieces
  • 1.5 pounds baby Yukon gold or red potatoes, halved or quartered
  • 1 medium yellow onion, diced
  • 5 tablespoons unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1/2 teaspoon lemon zest (optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 cup carrots, peeled and cut into chunks (optional)
  • 1/2 cup frozen peas (optional, add last 30 minutes)
  • Red pepper flakes, to taste (optional)

Instructions

  1. Trim excess fat from beef and cut into 1-inch cubes. Pat dry with paper towels.
  2. Wash potatoes and halve or quarter them for even cooking. Dice onion and chop carrots if using.
  3. In a medium bowl, melt butter. Stir in garlic, parsley, thyme, lemon zest, salt, pepper, smoked paprika, onion powder, and garlic powder. Whisk to combine. Add red pepper flakes if desired.
  4. Add beef cubes to the bottom of the slow cooker. Scatter potatoes, onions, and optional carrots on top.
  5. Pour garlic butter sauce evenly over everything. Gently stir to coat all pieces.
  6. Cover and cook on LOW for 6 hours or HIGH for 4 hours, stirring halfway through. Add frozen peas during the last 30 minutes if using.
  7. Check potatoes for doneness with a fork. Taste and adjust seasoning as needed.
  8. For extra richness, dot with more butter before serving. Garnish with additional parsley or thyme.
  9. Serve hot, spooning beef and potatoes onto plates and enjoy.

Notes

For best flavor, use well-marbled chuck roast. You can sear beef cubes before slow cooking for extra depth. Swap potatoes for sweet potatoes or cauliflower for a twist. Leftovers make a great breakfast hash. For dairy-free, use vegan butter. Do not overcrowd the slow cooker for even cooking. Prep ingredients the night before for a quick start in the morning.
