These creamy, slow-cooked pork chops are irresistibly tender and packed with comforting flavor. Inspired by the Pioneer Woman, this easy crockpot recipe is perfect for busy weeknights or cozy family dinners.

Ingredients

Scale
  • 46 bone-in pork chops (about 2 lbs)
  • 2 cans (10.5 oz each) cream of mushroom soup
  • 1 cup chicken broth
  • 1 packet (1 oz) ranch dressing mix
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter (optional)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Pat pork chops dry with paper towels. Season both sides lightly with a pinch of salt (if desired) and black pepper.
  2. In a medium mixing bowl, whisk together cream of mushroom soup, chicken broth, ranch dressing mix, onion powder, and garlic powder until smooth.
  3. Place seasoned pork chops in the bottom of the slow cooker. Pour the creamy sauce mixture over the pork chops, ensuring they are evenly covered. Dot with butter if using.
  4. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until pork chops are fork-tender.
  5. If sauce is too thin at the end of cooking, remove lid and cook on HIGH for 20-30 minutes to thicken, or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water). If sauce is too thick, add a splash of broth or milk.
  6. Taste and adjust seasoning if needed. Stir in chopped fresh parsley before serving.
  7. Use tongs to carefully lift pork chops onto plates. Spoon creamy sauce over the top and serve hot with your favorite sides.

Notes

For gluten-free, use GF cream of mushroom soup and ranch mix. You can substitute cream of chicken or celery soup. For a lighter version, swap one can of soup for low-fat sour cream or Greek yogurt (add at the end). Add-ins like mushrooms, onions, or spinach work well. Searing pork chops before slow cooking adds extra flavor but is optional. Avoid opening the crockpot lid during cooking to retain moisture.
