  • 1/2 cup honey
  • 1/2 cup low-sodium soy sauce
  • 46 garlic cloves, minced
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon black pepper
  • 2 tablespoons cornstarch (optional, for thickening)
  • 3 tablespoons cold water (for cornstarch slurry, optional)
  • Sesame seeds (for garnish, optional)
  • Sliced green onions (for garnish, optional)

Instructions

  1. Place the chicken thighs or breasts in the bottom of your slow cooker. Cut into chunks if desired.
  2. In a mixing bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, and black pepper until smooth.
  3. Pour the sauce evenly over the chicken, ensuring all pieces are coated.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the chicken is tender and cooked through (internal temperature should reach 165°F).
  5. Remove the chicken from the slow cooker. If the sauce is too thin, mix cornstarch with cold water to make a slurry, then stir it into the sauce. Cover and cook on HIGH for 15–20 minutes, or simmer the sauce in a saucepan for 5–10 minutes until thickened.
  6. Shred or slice the chicken, then return it to the slow cooker and toss with the sauce.
  7. Garnish with sesame seeds and sliced green onions. Serve hot over rice, noodles, or steamed vegetables.

Notes

For gluten-free, use tamari or coconut aminos and gluten-free ketchup. Add a splash of chicken broth if using chicken breasts to keep them moist. For extra flavor, add a teaspoon of grated ginger or a pinch of chili flakes. Leftovers keep well for up to 4 days in the fridge or 3 months in the freezer.
