  • 4 medium potatoes, chopped (about 3 cups)
  • 3 lb beef chuck roast
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon dried Italian herbs
  • 2 cups low-sodium beef broth
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 bay leaf
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

Instructions

  1. Chop carrots, celery, onion, and potatoes. Place them in the bottom of a 6-quart slow cooker.
  2. Heat olive oil in a skillet over medium-high heat. Sear the beef chuck roast for 3-4 minutes per side until browned (optional but recommended).
  3. Place the browned roast on top of the vegetables in the slow cooker.
  4. Sprinkle salt, black pepper, garlic powder, and dried Italian herbs over the roast and vegetables.
  5. Pour in beef broth, Worcestershire sauce, and tomato paste. Add bay leaf.
  6. Cover and cook on LOW for 8 hours or HIGH for 4-5 hours, until the roast is fork-tender and vegetables are soft.
  7. If the meat isn’t tender, continue cooking on LOW for another hour. If the sauce is thin, remove roast and vegetables, whisk cornstarch with cold water, add to liquid, and cook on HIGH for 10 minutes to thicken.
  8. Remove bay leaf. Shred or slice the roast and return it to the pot. Stir gently to coat everything in the sauce.
  9. Taste and adjust seasoning if needed. Serve hot.

Notes

For best flavor, sear the meat before slow cooking. Layer root vegetables at the bottom for even cooking. Adjust seasoning to taste before serving. For gluten-free, use gluten-free Worcestershire sauce and broth. Dairy-free by default. You can prep veggies the night before for quicker assembly. Double the recipe for large gatherings and use a bigger slow cooker.
